Anchovies
Visit anchovies (Engraulis encrasicolus), abundant along Morocco's Atlantic and Mediterranean coasts, are small fish that are rich in flavor and nutrients. Highly prized in Mediterranean cuisine, they are eaten in a variety of forms: fresh, frozen, salted, marinated or canned.
Morocco is one of the world's leading anchovy producers, thanks to its fish-filled waters and well-developed processing industry. Anchovies play an important important economic role, being destined for export to Europe and other international markets. They are caught mainly by purse seiners, guaranteeing sustainable and efficient fishing.
Anchovies are prized for their intense flavor and rich omega-3 content, contributing to a healthy diet. Their culinary versatility makes them an essential ingredient in many dishes, from pizzas and salads to sauces and preserves.
